I also have a 2017 2120 purchased new. Every year I flush the drain in the anchor locker. Each time I use the boat, at low speeds before I put her up on plane, I put the bow up and manually turn on the aft bilge. Depending on the amount of rain or water entering the locker during wash down...
I am finishing my 4th season on a 2017 2120sc, I have nearly 400 hours of experience on Nantucket Sound. I opted for the Yamaha 175 hp. At WOT it can achieve 41 mph—not that there are many days you can achieve that speed on Nantucket Sound. I have heard that the 150 hp is somewhat...

My 2120 SC is shrink wrapped and ready to rest. I have desiccant devices scattered around the interior. My question is- do I leave the pilot house doors, windows and hatch open or leave it sealed? There's substantial air passage beneath the engine and part of the transom. Any ideas?
I have a 2017 2120, but usually operate it with the cabin door closed. If I was experiencing what you report, I would rule out the piano hinge on the cabin door that is on the port side. I would probably start with a squirt or two of silicone spray.
I have a 2017 2120 SC with a Yamaha 175 hp four stroke just past motor break in period.
I had opportunity to push the throttle and got rpms in the high 4K and achieved 42 mph and it had more to go. She had a full tank of gas and two 200lb passengers aboard.
