It would help to know the specifics of the boat. What is the boat? What hp motor is on there now? A 250 hp motor on a heavier boat will leave it underpowered and less than desirable when compared to a 300 hp configuration.
My wife & I got the factory tour - and it was stupendous! We actually saw our boat on the floor. if you can arrange it, go for it - without hesitation!
I typically cruise at 4000-4200 rpm, and will usually see 24-25 knots on calm water with minimal breeze. I'll loose 2-3 knots, depending upon the wind and/or sea state. I don't have a lot of gear on the boat, but the fuel tank will range 1/2 - 3/4 full. I'm at the factory-installed motor...

I've got a 20-lb plow on my 2520 XL. For the ~5-6 times I've used it, it's always grabbed on the first set & held solidly. For the most part, I'm in the soft mud areas off Annapolis.
I put one on each helm station & love them. Our slip is a little tricky to get into, and having a suicide knob available on either wheel makes things immensely easier. Quick install & trouble-free through the first season.
