    As mentioned above, the XLD would be your deep V and XL would be your MOD V. If you can see the boat, as mentioned above, look at the # of strakes to easily determine what it is. If it is indeed a Deep V that changes everything and 250 is certainly not enough and you would be disappointed...

    Yes, being a Modified V the 250hp is adequate HP for that boat. Would 300 be better, maybe, however many have bought the same boat with 225's in the past. It's not a Deep V and you should have no issues pushing that boat just fine with a 250.

    23se windshield height

    I think I would just remove it before I would cut it. Since you have the 3 sided enclosure for colder weather, maybe you don't need it (the windshield) at all for warmer weather. Also, if you end up selling the boat some day you can reinstall it.
