I have a 2007 Yamaha 250hp 4 stroke. I went out yesterday for my first run with my 23 foot parker. at 28 mph I was burning on average 2.5 miles per gal. does this sound right. thanks for any help with this question. phil

Sounds pretty dam good if you ask me.

Top, top Mpg for a boat that is truly dialed in may be 3mpg so you are right on.

My boat with Twins gets anywhere from 1.6 to 2 mpg depending on load and sea condition.
 
Getting around 2.5mpg with my 23'PH and a 250/4stroke Yammy sounds about right to me. I think I'm turning around 4-4.5K rpms at that point.
 
I have a 2009 Parker DVCC with a 250 Yamaha. I cruise at 28 mph ~4000 rpm's and get 2.8-3.0 MPG's.
 
generally speaking................f250/23DV

2.2 mpg running max weight on plane moderate seas (full fuel tank, lots of fishing gear, heavy cooler/160# ice)

2.8 mpg running light in calm seas (1/3 tank fuel, 2 people, no gear)
 
My numbers match jims 2.2 loaded to 2.8 really light. Ill add 1.8 if boat is heavy and its very rough
