When you are up on plane where is the cavitation plate? If it’s below the surface you are sitting to deep on the bracket and adding a lot of drag.
What is the WOT RPM rating for the engine and what are you seeing for max RPM?
I have storage under each side of the V-berth cushions all the way forward. These storage compartments have the same hatch as the one for the aft bilge access on my boat.
The heading sensor, HS60 in my case, also enables radar overlay on the chart plotter/GPS.

I have a Simrad in the Pilot House, internal antenna and haven’t had an issue. I even connect to my house WiFi when the boat is in the driveway for spring preps to download any software updates to the Simrad.
I have added an HS60 heading sensor/GPS/digital compass to the top of the pilot house...

That connector should go to your plotter. The VHF should go to a NEMA 0183 network hub or a network connector on the back of the plotter. The plotter would send the GPS info to your radio.
