I ordered and received a 2021 2320 w/ Yamaha 300. Fantastic boat so far, was expecting a bumpy ride but was pleasantly surprised. I want to add outriggers and extra rod holders. Can the existing holders be switched over to swivel rod holder with use of backing plate? As far as outriggers would like to see some pics of various mounts. Not interested in gunnel mounted outriggers.

Short answer is yes, unless yours came equipped with the combination cup/rod holder, in which case there may be a bit of repair work needed for the covering boards. Lots of guys have made that swap, not sure if it's documented anywhere though. Depending on the size of the new rodholders, you may need to widen the hole with a dremel or something like that. I would double check while you're in there that Parker sealed hole in the covering boards with epoxy, rather than just sealant. The ones on my CC were just gooped up with sealant, which will eventually fail.
 
I also own a 2021 Parker 2320 with a single 300. The rod holders that come w/ our Parkers are Gemlux coastal series. I spoke with Gemlux on Friday, and they do carry the backing plates for this series: They are $9 each shipped ( if you tell them you are a "the hull truth" member ( and hopefully you are) you get 20% off your entire order).

In addition to the 4 Gemlux rod holders with backing plates ( Picking them backing plates up today as Gem is local to me), I have ordered (2) Lees 15 degree swivel HD flush mount rod holders ( one for each aft corner.... on the port side, it will be mounted just forward of the livewell). And (2) 0 degree Lees HD swivel rod holders. One will be mounted just aft to the second station on the starboard side and the other between the port side rod holders. These will be my two dedicated deep drop holders and fighting stations for wahoo on bent butts.
The Lees will also get Lees backing plates : All rod holders will be thru bolted.
Pics will follow upon installation.

Finally, as Palegic noted, all that adhesive sealant put in there will be meticulously removed, acetone washed and properly sealed with brushed on epoxy wetting out the cut outs before installing backing plates, thru bolts and Lees.
 
Pics of the Gemlux coastal factory installed rod holders with the backing plates I bought at Gemlux. Thru-bolted. Sealed. I still need to install my HD Lee swivel rod holders. Will post pics of that when completed. Here's the factory gem with backing plates.

I managed to get one of the Lees heavy duty 15° rod holder with backing plate mounted today in a very precarious place.

If anyone wants to do this and avoid the stern lifting eyebolts the bilge pump discharge hose attachment to thruhull above the waterline, the rigging fiberglass outpocket, I can give you the exact measurements where this fits snugly. All in all it took me about three hours because I measured about 28 times before drilling. Made the jig, fought bolts and sealant. Cleaned up.

** the picture of the backing plate installed does does not have the bolts threaded thru yet. The final install has 1" of bolt past the Stainless hex nut and washer of the backing plate.

Could you get a 15 degree facing straight out from the gunnel?

I really like that rod holder on the aft port side,1 question how do you like the bulkhead mounted 2nd station & does the wheel & controls feel comfortable to you
 
Look at those virgin gunnels! the inside of mine are covered in dried tuna blood 🤣😁
