Parker 2520 XLD with 300 hp Yamaha. Is this enough power for this beast ? Does anyone have any real numbers. Mpg and speed

I don’t have any first hand experience with this combination however JOHNKN, member here, did have this setup and wasn’t happy. I recommend you search his posts. He actually traded. In a brand new boat because of it. Personally, since this model is a deep v, I would think at least twin 200s or more would be need. That’s a good size boat and I personally know I would like a 300 on my 2320. The 2520 is significantly larger. Search his username for the story.
 
My 2003 2520 came from the dealer with twin Yamaha 115s.
I have owned it for six years and have been happy with this setup.
I typically get 2.5 to 3.5 mpg and run at 25 kts at 4500 rpm.
In Southern California the afternoon sea conditions don't allow you to go much faster.
