This answer may be long but here it goes. On my set up, I run an original Yamaha stainless steel (painted black) 17P prop. Engine is an F250 four stroke. Performance varies greatly with load, weather, etc. One note is that on the original 2530 Deep Vee set up for a single outboard, it only had a 154 gallon fuel tank. Also, the original 2530 Deep Vee is a different hull than the new one. The new one is built on the XLDV hull and the new one is about 500 lbs heavier. Note that there were also 2530 modified vees as well.
So as for performance, in the bay (as shown in attached pictures) I can get great performance with a normal load and approximatley 100 gallons of fuel.

With the original OX66 250 HP, out of the hole was better and it was quicker, top end was 39 mph. However, the fuel economy was not as good. At best on offshore trips, I would average about 1.2 MPG with the OX66. With the F250, on similar offshore trips I average about 1.7 MPG. With the better economy, I no longer carry the 30 extra gallons of fuel.
