I'm going to remove this so I can put a 120 qt. yeti in this spot.If I put all the screws back in with some life caulk would this seal it well enough.I don't want to use something like 5200 in case I ever want to reverse this and put the guard back on.I also don't want any water intrusion getting in through the screws,seems to me this should work.
 
3M 4200 or just use some cheap and easy Epoxy and then top it off with some Marine-Tex to match the deck. I purchased some epoxy from Lowe's that is 2 part but self mixes into a single syringe as you push the plunger. Or you can put the screws back in using 4200, you will be able to take the screws back out using 4200. Just coat the screws and holes with it to to seal them. Others here may have different/better ideas also. Good luck.

I'm a fan of 5200. And while it's tenacious, it's not strictly permanent. It's not that difficult to back out a fastener that was sealed with 5200. I've removed an outboard motor that was sealed with 5200 - yes, it took a bit of gelcoat with it, but that's the kind of seal I want. If you want to keep the water out temporarily, use 4200 or whatever -- if you want to keep the water out permanently, use 5200.

And I like to fill the hole from the bottom up, using a syringe.
