Instruction manuals say not to do it, but I see many ignoring it. Its awkward taking the motor off and putting it on again at the destination. I was wondering how many boaters cheat and just tow it with the motor on or if someone has had a bad experiance(or never).

When it flips over, you'll wish you took it off.

How fast you talking for towing?

I cruise at 25 knots +, too fast to tow any inflatable.

I put mine in top of the pilot house when I use it.

I have a 2520 with twin Yammy 115s. I tow an Avon 9.5 foot RIB with a 4hp yammy on it. The motor will reliably stay in the tilted position which is not the case for some motors after they take a few bumps. I use a harness, tow from my stern lift hooks and distance the RIB just behind my stern wave.
Needless to say you can't run any faster than sea conditions permit and almost never at open throttle. I usually tow the dingy at about 15 mph tops. I am generally only going about ten to twelve miles distance one way when i do tow it.
I venture to say that a RIB will tow much safer than a small v-bow.
